Good Morning, Gang… I learned how to use a chainsaw many, many years ago – not sure what that means about my “man card” – except that I was also taught how dangerous it could be, so that (unless I needed to cut up firewood) I prolly should be NOT using a chain saw… as if I could ever get the danged thing to run anyway
Now that I can relate to. And a few observations; First he has a real chainsaw IE Stihl and more importantly he (or someone) has used the saw a lot since it shows wear and tear. Second he did mention steel toe boots and safety glasses although as hard as I try I usually wind up taking off my glasses because they stay fogged up all the time in the heat. FWIW; He’s using a Wood Boss, one size smaller than mine but a real saw. Wood Boss (MS 251) 46 CC 3 BHP, Farm Boss (Ms 271) 50 CC 3.5 BHP. Both with 18″ bars you can get a 20″ bar but you really need to step up to the MS 362 with a 59 CC 5 horse motor and a 3/8″ chain.
Mornin’ Gang
How about that, bsue snuck in and grabbed first while I was pecking away but I did have to take a time out to let Dawg out.
LOL SuperDave… I wished that I could’ve gone back to sleep – would’ve gladly yielded “first”… And the chainsaw I was “trained on” wasn’t a REAL chainsaw – it was a 10″ McCullough – and I never EVER cut DOWN a tree… I always left that (and still do leave that) to the menfolk. I just needed something to burn in the cast-iron stove when it was bone-chilling cold at Medina Lake…
WTH?!?!? I posted my #5 and went back to edit it and it came up with my #2 and replaced what I’d posted?!?! Now the Battery powered saw post is out in the wilderness somewhere. 🙁
#5 SD – the funniest thing about working at Thousand Trails (Recreation Director – NOT maintenance, or landscaping or any of those logical things) was when the new resort manager decided that I needed to trim the hedges/bushes at the Activity Center, so he brought his personal ELECTRIC hedge clipper with a GREEN extension cord, so that I could do so… I promptly cut through the extension cord with the hedge clipper, and the Maintenance guys decided it was much safer, to say nothing of EASIER- for me to just let them do the hedge trimming… and me drag the cut off stuff to their truck to haul off…
SO! I’ll try to rewrite my #5. I was responding to bsue’s; … as if I could ever get the danged thing to run anyway.
Just before we retired I got my wife a MS 120 Battery Powered saw. She’d been want a small saw of her own but I knew she’d have a hard time starting it and then I found the battery one and since it was Stihl product I knew it would be quality but still though it would be more of a toy but I was wring! That thing will do the job on small trees and limbs and my wife loves it. I’d never have considered one for me but after using it I’d get one if she didn’t have it. It’s great to toss in the Mule to make a quick cut without powering up the big guy. One time we were down on the Bear Creek Trail in my wife’s Mule and a dead pine had fallen across the trail. It was a good 8″ in diameter and 30′ long but dead. We just happened to have her little saw in the back and I cut it in two so I could move it. Had it been green, I may have been able to cut it but it would have probably killed the battery before I made it all the way through.
Super Dave, I think the greatest thing ever has been the advent of rechargeable batteries for small engines… Don’t get me wrong – I know that I could still hurt myself really seriously with a battery-powered chainsaw – but at least it wouldn’t put me in bed for a week with a back injury from lifting the danged thing, after pulling my arm out of socket trying to get it started!!!
#6 bsue; Years ago my Dad got tired of cutting the huge hedge along the left front of the house with shear clippers and bought a Sears N Throwback electric clipper. He made his own extension cord out of 100′ of Military phone wire, not the tiny steel Field wire but 18 Ga solid copper twisted wire. This was about the time I moved away and one time, years later I was home when he clipped the hedge and that cord must have had a dozen black-taped splices on it. 😀
BTW; Wife has one of these; HSA 56.
Well as long as bsue is around I’ll not be able to murder the blog, so there’s that. 😀
JOKE OF THE DAY:
Frank always looked on the bright side. He would constantly irritate his friends with his eternal optimism. No matter how horrible the circumstance, he would always reply “It could have been worse.” To cure him of his annoying habit, his friends decided to invent a situation so completely bad, so terrible, that even Frank could find no hope in it.
On the golf course one day, one of them said, “Frank, did you hear about Tom?”
“He came home last night, found his wife in bed with another man, shot them both and then turned the gun on himself!”
“That’s awful,” said Frank, “but it could have been worse.”
“How in the world,” asked his bewildered friend, “could it have been worse?”
“Well,” replied Frank, “if it happened the night before, I’d be dead now!”
😀
SD – LOL… I have these – only I think mine have wooden handles…LOL https://www.homedepot.com/p/Fiskars-1-1-2-in-Cut-Capacity-Bypass-Lopper-with-Blade-and-Handle-391651-1003/300450094
Morning gang. Looks like I’m late to the party this morning. No real news to report so far today. I do like the chain saw discussions. I remember during the aftermath of Ike some little old lady called the radio station to inquire where she might find someone to cut a tree that was blocking her sidewalk. She was advised to just go outside and listen for the chain saw noise and ask the first person she saw who had one – on the premise that people who own chain saws love to use them. Something to be said about that.
In other news, looks forward to another nice day out here. I’ll be outside kicking around I suppose. Ground is still wet from the weekend rains, but the warmth has brought the fire ant to the surface, so I’m slaughtering them as fast as I can find them. I’ll report back later if something develops. You all have a great day.
Good morning. One degree F here is AM going up to 3 F for a high, then it cools down for the rest of the week. Now, where did I put that sweater?
After Ike, NASA was shut down for over a week and I spent the whole week running around the neighborhood cutting up trees and such. I had a great time even if I only had a little 18″ Poulan. It did a fine job though, Huntin’ Buddy and I used it up at the Deer Camp for about 10 years. Of course that kind of use is low hours use. I don’t know how many hours I have on the Farm Boss but I go through almost a gallon of gas a month in the Summertime. And it’s due for a new bar don’t know how many chains I’ve been through but i can make them last pretty good with my handy dandy saw sharpener.
texanadian, Mercy! You’ll need more than a sweater. 52 here and shooting for the mid 70’s but the rain will be here this afternoon/night.

I am pleasantly surprised the term “toxic masculinity” hasn’t been broached yet.
Because, this group on the Couch is more sane than what’s “out there”.
I like my men to be men. They don’t have to be Conan, but, as a woman, I like masculinity. If Hubby ever sat around in his pajamas discussing health care, I’d have to seriously consider either spiking his food with testosterone or divorcing the dude.
Not a problem..
PS: I’ve found out in some of my foraging information videos that pine pollen has been used as a T supplement. I don’t know if it still is. But there are some interesting recipes using pine pollen as flour.
I’ve taken my last steroid pill. Here’s hoping that some of these ear problems, etc., fade away. I seem to be sensitive to loud noises, which used to not mess with me too much. Something happened the other day, some kind of loud noise, and DANG if my right ear tinnitus didn’t jump in volume. I had a problem last night, when a bunch of people started talking all at once. I just couldn’t deal with it and hightailed it out of the room as quickly as possible. I’m feeling pressure in the ear again this morning. I guess Hubby’s right, and I need to see the doctor. Again. I can wait until the elbow x-rays are sent to the doctor and do it all in one trip, I suppose.
Dealing with the morning head, coffee in hand…
Good morning, C&C, it’s the last Tuesday in November! Our terrific roundup includes: London’s new driving tax; a crazy ironic death in DC; the WaPo outs its groomer self; the awful Balenciaga story offers optimism; and exiting Fauci admits the truth even while weaseling.
It’s a short round up today, it seems. Onward!
First up, the mayor of London has extended its crippling climate warmongering tax on vehicles over the whole city.
Like, who couldn’t see that coming? And who couldn’t predict how it would ravage the economy? Who gets hurt the worst? Oh, the poor folks with the older cars and the tradesman who need to drive their tools to job sites. There is huge pushback from the populace, of course, and good for them. But Childers makes this observation (emphasis mine):
When you think about it, if this logic holds, there is literally NOTHING that couldn’t be done in the name of “cleaner air.” Next up, they’ll be banning bovines, burritos and barbecue beans.
Folks, this is what happens when you let politicians arbitrarily change the rules for “safety” from a virus. We never should have let them get away with that. Now everything they want to do — like make it too expensive and inconvenient to drive our own cars — can just be draped in the sticky fabric of ‘health and safety’ and — ta-da! — walked right by near-unanimous public disapproval.
They now know exactly how many folks will just calmly, even enthusiastically, go along with the restrictions of not only their freedoms but those of others- because their virtue signaling button feels so good when it’s pushed.
Those folks need some serious head shrinkage.
And in a quirky twist of fate, “Kelvin” was a guy who pushed for lighter punishments for certain gun crimes. He himself was a perp, so his pushing the DC legislators to lighten the punishments was more than a little self-serving.
Kelvin was killed by a gunman. Shortly after (and probably totally oblivious to the event), his bill was passed.
So, Kelvin was successful, and his killer will suffer lightly.
You can’t make this stuff up.
I don’t know who this woman is and I can’t figure out how to repost a TikTok video without signing up for their app. One of the best three minute monologues I’ve ever seen.
Don’t miss it.
It is titled: She Nails It.
If I didn’t already have one brunette woman in my life, I might marry this one.
TexMo linked to this article that is in front of the WSJ paywall. If you haven’t read it, you should. The Biden administration will stop at nothing to destroy our oil & gas industry and turn South America over to the Chinese.
Next up at the C&C is how a fashion designer is getting blowback for using BDSM images with children in its advertising. Sweet little girls holding teddy bears wearing leather harnesses and such. And using runway models made to look like they’d been on the losing side of a dark alley mugging.
Even the Spew found their ad campaign distasteful, and there’s not much on the left side of sanity that those hags won’t approve.
For its part, less than a week into the scandal, Balenciaga started publicly apologizing, pulled the new line, and has already filed suit against the set designers, alleging it was hoodwinked.
https://twitter.com/seanhannity/status/1597407511346384897?s=20&t=NlP5XPZw_W8rd4jqlAM-Mg
Under exquisite pressure, Balenciaga was forced to delete their twitter account:
/snip
The Times reported that since the teddy bear campaign images were released, the photographer, Mr. Gabriele Galimberti, said he has been inundated with hate mail and death threats, has had jobs canceled, and has been doxxed.
Too bad.
But Childers sees a bright side to this disgusting debacle:
Now, a totally understandable take that I’ve seen before in the C&C comments would be revulsion, disgust, and disappointment because of the condition of the world. However I think that’s the wrong take. In under two weeks, this revolting élite brand has been badly damaged, probably beyond recovery, and has forced the left to draw a line, however delicately, and however tepid the View ladies’ condemnation actually was.
In other words, the resistance to this kind of evil is becoming better organized, better coordinated, speedier and more effective. Finally, after everything we’ve been through over the last three years, a line may have at last been crossed, and the sleeping giant may, after his distressingly long slumber, be waking up.
He is the snarky optimist.
From the C&C comments:
I think you are right but there’s more to it.
A decade ago, mentioning that the world is controlled by a group of satanic pedo elitists would have caused one to be instantly dismissed as a nutjob. Not so anymore as more and more people are seeing the pervasive evil all around us. People who I’ve followed for political analysis (who I had no idea were religious) are now openly quoting Bible verses. Although its not a majority, people are waking up as biblical prophesy plays out around us.
This story is no different than the Comet ping-pong or Podesta stories from 2016 that were dismissed by the media as lunatic conspiracy nonsense. No one admitted anything back then and those pointing out the obvious pedo aspects were tarred as deranged and dangerous.
But this time however, the company was forced to deal with it, distance themselves, and claim how “shocked” they were. Big change. There has definitely been an awakening to the evil around us as many people now realize this stuff isn’t so far-fetched. Interestingly, just this morning I saw an article that claimed less than 50% of England and Wales now identify as Christian. The media are frantically pushing this post-Christian narrative at the exact same time so many people are realizing the truth. The battle lines have never been clearer and more pronounced. Fortunately, those of us that put our trust in Jesus know how the story ends.
It’s just that getting to the end is going to be painful.
It is titled: She Nails It.
Dayaam yes she does! I’m glad I made a quick trip to the closet in my office to get my plane this made the trip worthwhile.
TT, 0836:
Those folks need some serious head shrinkage.
We are waaaaaaay beyond that now. It is time for some Biblical punishment, public stoning and/or shot through with an arrow or spear. With these kinds of crimes against Elohim and humanity, only the Biblically prescribed punishments will suffice.

Europeans have already doomed themselves to freeze in the dark this winter. Now, the Euros are focused on starving to death, too.
The Dutch government is planning to buy and close down up to 3,000 farms near environmentally sensitive areas to be in compliance with EU environmental rules.
It comes after farmer protests erupted this summer following a government plan to reduce nitrogen emissions by 50% by 2030, The New York Times reported. Farmers believe the measure unfairly targeted the agricultural sector, which is responsible for the largest portion of nitrogen emissions in the Netherlands, the Times added.
The government will conduct a “compulsory purchase” of large nitrogen emitters as part of a voluntary, one-time offer, announced Nitrogen Minister Christianne van der Wal, Bloomberg reported. Farmers will be offered a deal “well over” the value of the farm, according to the government plan. She asserted “there is no better offer coming” in a Friday meeting with MPs.
From Shannon’s #22:
Even Intuit, the company that runs America’s dominant online filing software, employed the pixel. Intuit’s TurboTax, however, did not send financial information to Meta but, rather, usernames and the last time a device signed in. In some circumstances, the pixel also gathered information like an order ID number and user’s email address after they signed in.
and,
Rick Heineman, a spokesperson for Intuit, said the company’s pixel “does not track, gather, or share information that users enter in TurboTax while filing their taxes,” although Intuit “may share some non-tax-return information, such as username, with marketing partners to deliver a better customer experience,” like not showing Intuit ads on Facebook to people who have accounts already. The company said it’s in compliance with regulations but has modified the pixel to no longer send usernames.
It is illegal under federal law for these companies to be allowing Facebook and Google to collect this information on Americans. The penalties are financially severe, but no one in DC seems to be paying attention or be concerned even though tech watchdogs have been writing about this for at least a year.

Well, we certainly can’t see what’s coming from THAT little exercise, can we?
Morning, chickadees. It is surprisingly warm in Houston today. Currently 79° and later to be 81°. I was surprised this morning to see the backyard was yellow, with a million yellow leaves that had come down overnight.

I laughed when I saw people saying Disney would return to a more moral and wholesome direction because they brought back Bob Iger as CEO. He just left in 2020. Did any serious person believe all this LGBTQ indoctrination for children started in the only the last 18 months ? Iger knew exactly what was going on all the time and was even being paid $10 million in his short-lived retirement to “advise” Chapek, the fired CEO.
Bob Iger, the newly appointed CEO of Disney, pledged to double down on LGBT “storytelling” in the company’s animated kids’ movies during a Monday town hall with employees, according to The New York Times.
Iger served as CEO for 15 years before retiring in late 2020; he was brought back in about a year later after his successor, Bob Chapek, was fired, according to the NYT. Tumbling stock prices marked Chapek’s tenure as CEO, as did public outrage over the company’s political engagement in Florida and its alleged efforts to inject sexual content into children’s shows, particularly through gay and transgender characters.
An employee at the town hall asked Iger about the company’s commitment to LGBT storytelling in the future, and he responded affirmatively.
“One of the core values of our storytelling is inclusion and acceptance and tolerance, and we can’t lose that,” Iger said, according to the NYT. “We’re not going to make everyone happy all the time, and we’re not going to try to … We’re certainly not going to lessen our core values in order to make everyone happy all the time.”
I use QB pretty much because I have to. I have resisted their efforts to “persuade” me to keep my database online, on their servers. I use a desktop version and my CPA and I transfer files when she needs to make changes to my data, then I import her changes.
The idea of letting someone else hold my data, and possibly holding it ransom, gives me the shivers. What if they get hacked? What if we get crosswise with the annual licensing payment?
Nope. I want control of my files. They probably peek at it, but I am holding onto my data for as long as possible. Given that we’ve sold off some of our property (and will sell more off at some future time), and my other company for my note investments has so few transactions, I may be able to dump QB altogether at some future time. I’d have to work with my CPA then to determine the best way of getting data together for taxes. GnuCash? Spreadsheets? All of the TBD.
Thanks, WB. That is an image that cannot be unseen.

Please pray for the souls Father Otis Young and his assistant / secretary Ruth Prats of the archdiocese of New Orleans . They were brutally murdered in a parish about 40 miles north of the city in a small close knit community. This has shaken and broken the hearts and souls of our town and St Peter parish and surrounding parishes as you can imagine . It’s been a rough day
RIP, faithful servants.

I’ve been using ESET for a good 10 years and have zero complaints. I originally purchased it through Micro Center. At one time, it was the only place you could buy it. Now, I think you can go direct.
I also use Nord VPN on Squawk’s recommendation.

I must have grown up in a privileged household because I was taught that “sticks & stones can break my bones, but words will never hurt me”.
Poor, poor Sheila never had the opportunity to learn that basic childhood lesson.
I thought “Ford vs Ferrari” was probably going to be my last foray into a movie theater. This has me wanting to go back on a Sunday morning when the theater is empty and watch it.
Following the sky-high box-office numbers of “Top Gun: Maverick,” anyone who glanced at the movie trailer for “Devotion” — a true story of heroic U.S. Naval pilots, currently in theaters — probably thought producers were trying to cash in on the craze.
This historical film has been in the works for over six years, however, starting shortly after the book, “Devotion: An Epic Story of Heroism, Friendship, and Sacrifice,” began to make waves. It recounts how two long-overlooked pilots led a mission that turned the tide in the Korean War’s most brutal battle.
“That entire war has been woefully forgotten,” author Adam Makos told me in a phone interview. “The last major Korean War movie was ‘Pork Chop Hill’ starring Gregory Peck, released in 1959 — over 60 years ago. And Hollywood hasn’t gone there since.”
and,
Such a rare ethos of honor permeates the film — including with another key player, aerial coordinator Kevin LaRosa Jr., known for deploying the CineJet system on “Top Gun: Maverick” for maximum in-flight realism. Here they took it a step further, restoring four authentic F4U Corsairs for their lead pilots to fly.
Makos, who has also authored three books on key World War II figures, was thrilled. “The moment I saw those planes coming into the hangar, I knew we were going to have something very serious, real, and visceral,” he said. “They could’ve done one or two planes and the others digitally, but they didn’t.”
Tedtam @ 1:22pm
That is horrible! As a layperson in the Orthodox Church, I actually do not know the consequences of killing someone in self defense. I do not know if there is a temporary suspension of being able to receive communion or what.
I do know that Orthodox priests are not allowed to kill even in self defense. They will be returned to the laity. The priest that founded our parish kept a baseball bat behind his office door. Another priest eventually became a 3rd degree black belt in TaiKwonDo. The current priest just locks the door to keep transients from just walking into the church office. He is also a big guy that played football in high school so that helps too. Also, the current priest has no qualms about parishioners carrying concealed firearms.
What happens to a Catholic priest if he kills someone in self defense? I wonder if the priest in Louisiana tried to talk his way out of a bad situation and it didn’t work.
Texpat you have mentioned that you are in the landing approach of your local airport and you are curious about the various makes and models of aircrafts.
Have you considered downloading one of those apps such as FlightRadar24? If you see the plane in the sky and then click on it within the app, it will generally tell you the make and model of the aircraft along with a myriad of other pertinent information.
I did my pre admittance testing last week for my liver ablation tomorrow in the med center. They forgot to run one type of blood test so I went to the Sugar Land location to give more blood this morning.
I also had to get a covid test. I started out in office building #3 for the covid test which is at the far east end of the campus. After that my mom drove me to the other end of the campus for the blood draw. This is where I’ve always gone for lab work prior to chemo infusions. The nice lady told me I needed to go to the main hospital in the middle of the campus so I walked over there. At the main reception desk, they told me that since my procedure is in the med center I couldn’t get lab work done at the main hospital. I could, however, walk over to Building #3 and get it done there. The waiting room for the blood draw was literally right next door to the suite where I had my covid test done 20 minutes prior.
Fortunately my mom didn’t get lost when I told her what happened and where she needed to pick me up. I’m just glad this all happened in Sugar Land. If I were down in the med center, I’d probably still be wandering around lost between all the buildings on the east side of Fannin and those on the west side of the street.
So tomorrow is the ablation and I’ll have to spend the night at the hospital for observation. I should be discharged early Thursday morning. Then the 2nd week of December I’ll have my ileostomy reversal. That will require a 3 – 5 day hospital stay.
Prayers for complete healing and rapid, uneventful recovery for both procedures are appreciated.
TexMo – many prayers for uneventful procedures and followed by rapid recovery!
This article is six months old, but still hilarious.
Tampon dispenser ripped off Lyons Township H.S. boys bathroom wall, stuffed in toilet
There is no way I would punish my son for doing this even if he were caught red handed.
Texmo – I believe that the Catholic Church does not punish self defense against any physical action. That’s why Catholics are allowed into the military, under the auspices of defending a country is defending oneself, or something like that.
This discussion reminds of the movie “Hacksaw Ridge”. It’s based on a true story, true guy (he’s interviewed at the end of the film). This man refused to shoot a gun but wanted to serve his country. What he went through and what he did on the battlefield is truly amazing. God’s hand was on this man.
It’s a film with a lot of violence, since it deals with war, but well, well worth watching.

Have you considered downloading one of those apps such as FlightRadar24?
I’d have to be really fast on the phone. During busy times, these planes are landing so close behind one another I don’t know how they don’t pileup on the runway. One of these days when they are one after another, I’m going down to Teterboro and park to watch them land. It can go on for 2 or 3 hours here and I don’t know where they put all that aircraft. Teterboro is not that big.

Rabbis and all Jews are obligated to protect and defend all human life. I’m not saying they do or will in a future situation, but there is no prohibition on taking the life of an attacker to save the life of an innocent.
There was an infuriating video clip taken in Brooklyn recently in which an elderly Orthodox Jewish man was being beaten and robbed by some punk. There were three other Jewish men standing there with their phones trying to call somebody. One of those guys was more than twice the size of the mugger. All he had to do was go over and slug the punk.
It was so disgusting and embarrassing to see fellow Jews stand around while someone, Jewish or otherwise, was being attacked.
Here is your, bizarre unexplainable story for the day.
Biden spent Thanksgiving on the ritzy Massachusetts island with his family last week. The Secret Service rented five vehicles from Hertz to carry the president and his family, and all five of them caught fire in the parking lot, according to footage first obtained by the Nantucket Current.
Footage shows firefighters spraying down the smoldering remains of one vehicle’s engine block. The five vehicles included a Chevy Suburban, Ford Explorer, Infiniti QX80, Ford Expedition, and a Jeep Gladiator.
The vehicles were parked at the Nantucket airport and the blaze reportedly spread to just 40 feet away from the facility’s jet fuel tanks. It is currently unknown what caused the fire. Fox News reached out to the White House for information, but they did not immediately respond.
Anybody want to explain to me why a rental car parking lot could be located 40 feet or less from jet aviation fuel tanks. Given the electric car incidences of spontaneous combustion with lithium-ion battery fires that are almost impossible to extinguish, it seems to me airport authorities and the FAA would already have strict rules about locating any parking areas near fuel storage facilities. WTH ???
78 degrees out there man what a fine day. I even managed to work up a sweat down at the pond. the wimmins, (wife and sister) headed out to Columbia about 9 AM and I’ve not heard from them since so no telling where they wound up. The reason for the trip is that we found a guy that would re-cane our dinning room chairs for $100 bucks! Can’t beat that, the next closest place was Atlanta and we didn’t even ask since it’s an antique refurbishing place.
Oh and TexMo what he said, we’ll be praying for you, I often forget all you have been through in the last year or so. Bless you.
#48 TP: To call this event “suspicious” does an injustice to the word. The engine bay catching fire on 5 different makes and models all at the same time? There is much more to this story and we will likely never know the truth.
TexMo: Conquer this thing and may Elohim be with you and all of your doctors for a complete recovery.
Well, I thought I’d get some things done today — find out where to take my hurty leg for an exam; get an electrician out here to look at the fuse box in the garage; get my flood insurance updated… See, it’s not that I have forgotten about these issues. I just don’t feel like gettin’ goin’ on anything at all. Well, I can eat breakfast, but then my energy level flatlines.
#51 – Over here only ONE word came immediately to mind……(whether reasonable or not):
ARKANCIDE
#45 – Check out the FlightRadar24 – it’s live of all flights everywhere n the world, but you can narrow it down to where ever you want it. It’s awesome.
Speaking of aircraft, here’s the ATC for the Mooney that flew it into the transmission line the other day. https://www.youtube.com/watch?v=fdMA5Vm-VEU Pilot radio responses are unfortunately unavailable.
TexMo – good luck with your upcoming procedure.
#53 – mh – don’t get me started again, but in the strongest possible language I need to persuade you that it is time for you to go see your doctor. I already lost BFF earlier this year for not speaking up when similar symptoms were apparent since I just wasn’t up to the argument. So go get yourself looked over, have some blood work done, an EKG, be honest about how you are feeling, ad let them diagnose you or be certain that there is nothing wrong. Hardheadness is not to be tolerated.
The rest of you take care of yourselves as well.
Wow.
The front has made it into the panhandle and it’s 40 degrees colder than the rest of the state.

#57 Shannon – if you’ve ever used Wick Fowler’s, let us know how it compares PLEASE

It’s been over thirty years since I have used a chili mix – I had my own personal Chili Queen for over thirty years. Hers beats every other chili on the planet.
I did use Wick Fowler’s before I met Fay. So far, the Shelby seems much darker brown and thicker. I will also say that WF was always a bit too heavy on chili powder. Shelby seems to use somewhat less. I’ve already added more water than the recipe calls for. Plus, I replaced one of the two cups of water with Rotel.
I’ve never used Rotel in chili before. So I don’t really know where I’m headed with this batch.
A pinch of white pepper (one of Fay’s secrets) has made it better.
Nice tips – I’ve always used Rotel, as well… Need to get some more – used the last can in some cobbled together taco meat to put over tamales (the pinto beanies from HEB were pretty tasty). Will need to add white pepper to my shopping list
She taught me that most people overdo it with the chili powder. When she/we would cook it, we always started out with X amount of chili powder, knowing that it wasn’t enough. And then, over time, add tiny bits more, sneaking up on the perfect amount.
Everyone has their own taste target.
When I eat chili I want to taste BEEF. Not just seasoning. We saw eye to eye on that.
🙂
sneaking up on the perfect amount.
But of course, in the end, you never know until the next day if you hit it.
🙂
And by the way, the Cook’s Illustrated trick with the Baking Soda for browning the meat really does work.
File this under It Ain’t Braggin’ If You Done It.
Back around 2010, I published my chili recipe on Lone Star Times and have no idea how many people copied the recipe.
David “Big Jolly” Jennings took my recipe and linked it to a PDF file on his site and said he got 2,500 downloads of my recipe.
I have no record or reports if anybody died from eating my chili, but I did tell David we should have charged $10 a head for recipe download and split the $25,000.
The chili pepper mix most Texans were raised on was Gebhart’s and it was a blend of ancho, cumin, paprika and onion powders. It’s not the real deal.
I use pure chili powders, ancho, cayenne, chipotle with a little paprika. I use more smoky ancho powder these days because I like that earthier, dark flavor.
And cayenne has no place in chili. It simply doesn’t work.
Use several dried Arbol chiles for heat – and keep checking the chili…you may decide to pull all (or some) of them out along the way.
Shannon
I just use a pinch of cayenne but now you’ve tried to start another damned chili war. I did leave arbols out of my list even though I always use them, even if not quite as much as I used to.
Also, Her Highness wants to know what the deal is with baking soda and browning meat.
Do tell.
“Friend, how long’s it been since you had a steaming bowl of Wolf Brand Chili??? Well, that’s too long!!!!” When We were in Germany, we could sometimes get Gebhardt’s Chili at the commissary – and we would, so we could pretend it was Wolf Brand… LOL
Cayenne is a great spice.
It can ruin chili. Give it a weird aftertaste.
Just my opinion.
Arbol is a clean, light heat.

When my aunt and uncle were stationed in Germany with Pan-Am in the 1960s, we would box up pinto beans, chili powder and corn masa for tortillas and ship it to them. We did the same thing when they were stationed in Okinawa with the Navy earlier.
Here is an article that references the Baking Soda trick.
Another article I read says to heck with making a slurry. Just sprinkle it. Which I tried tonight and it worked great.
Trying to distribute a couple of teaspoons of baking soda slurry throughout a couple pounds of meat only forces you to work the the meat too much. The last thing you want to do with any ground meat is handle it too much. Whether it is for burgers, meat loaf, chili or whatever you need browned ground beef for. The less you work it, the better. We’re not kneading bread dough here, folks.
So tonight I made each pound (1 chili meat, 1 ground beef) into a giant patty and carefully sprinkled the tiny amount of baking soda on it. Let it sit for 15 minutes.
Baking soda lowers the ph. Breaks down the proteins. When browning, it keeps the meat moist, so you don’t start out with dried beef crumbles.

I think I’m getting over the worst of what I think was a viral inner ear infection. What I’ve been going through has some similar characteristics to a previous infection.
The heavy blanket over my right eardrum seems to be lifting and the pressure in my ear seems to be lessening. I felt badly enough earlier that I laid down for a nap this afternoon. After that I had enough pep to fix an easy dinner and I am now feeling the best I have in days. The tinnitis seems to be getting back to normal, for which I’m grateful.
I’m waiting to see how I feel in the morning before I go doing any cartwheels, though. Hubby has been so sweet and supportive of me while I was going through the days of yuck. I never ran a fever, thank goodness, just felt subpar. It could’ve been worse. I could’ve had vertigo like before, where I had to crawl on the floor to get around.
The mark of a true hamburger chef is a finished, cooked product that doesn’t look like it was stamped out of a machine. The patty should look misshapen, perhaps breaking off on the edges. Not perfect. You know right away that the ground meat wasn’t abused.
Glad you are feeling better TT.
Wick Fowlers Chili. Add beans to taste. Best Chili in the world

“At least he didn’t say Wolf Brand out of a can because even those people know better than to put beans in chili.”
Williams chili mix replaced my home grown recipes. It’s far an away the best chili mix out there on the grocery shelf if you are lucky enough to be able to find it. Silver packet. Original or Tex-Mex, I can’t tell the difference. Good mix of spices, and then you can add your own additional spices to taste – pepper, garlic, more chili powder, whatever. I usuall add a small amount of each, but the mix right out of the pouch would be certainly just fine, and your sweetie would not deem it too hot either. Check it out – none of those others measure up.
In other news, it’s about bedtime out here. I hear cold is on the way, but we topped 80 today. Night nite you all.

The absolute truth right there.
Ground meat is like pie crust.
You’ll be sorry if you abuse it.
