Not able to do any grilling or smoking right now, we were good with just regular 4th of July hot dogs today but my sweet sister and her hubby would have non of it. They are bringing over brisket and pinto beans in a little while. BIL does a mean brisket.

“Return to Tradition” on Youtube has an awesome letter from a canceled priest to Pachapapa.
It was an open letter, and several outlets have picked it up. This priest calls out the pope for his doctrinal errors and hypocrisy.
To see this in print, and put directly to the pope hisself, is awesome. And, as Anthony Stein says, he was probably holding back.
Won’t make a difference, but I hope it wakes up a few folks who may not be aware or may not care about the rot in the Vatican.

Hubby and I were just going over our schedules for the day. We’ve never been big on going to celebrations or public events on holidays. And I get absolutely worn out by ‘HAPPY FOURTH!’ all day long. Every show on radio or TV has to act as if they are the first and/or only to do this, so it gets old after a bit. I’m not even listening to the radio today because it’s all going to be repetition or replays.
On my to-do list, which I know I won’t be able to finish:
Gardening (been putting it off too long, those injections)
canning (a full crock pot of ropa vieja to can, along with some ghee)
decluttering (gotta make room for more jars)
barbecue (gotta get the brisket going)
bookkeeping (always)Oh Hubby’s list:
Finish the lift at our duplex (I suggested some time ago that he do this, because the stairwell is narrow and somewhat steep. Getting appliances and equipment up and down those stairs is a royal PITA. Hubby finally agreed that it was a good idea and he’s been welding up a system for the last week or so. Today, hopefully, will be test day.)

Well, well, well, it seems that the latest “American hero” had some choice words for the J6 debacle before participating in that train wreck:

On Feb 1. Hutchinson sent a text to a conservative activist with connections to the First Amendment Fund, which is a group started by the American Conservative Union that helps Trump officials cover costs for Jan. 6 lawyers. Matt Schlapp said Hutchinson approached CPAC for help through the First Amendment Fund. Schlapp said he is happy they did not end up assisting her because she was relaying White House “hallway gossip as fact.”
“I had to accept service because the U.S. Marshalls came to my apartment last Wednesday, but I haven’t made contact with the Committee. I’m just on a tight timeline and just trying to figure out what my options are to deal with this bs,” Hutchinson added.
The Daily Caller contacted Hutchinson multiple times about the text message to which she did not respond.

If you’re outside in this heat, don’t forget how it can affect your phone functions. A few years ago, I was on a big project and one of my hands thought his android phone had died. When he handed it me, it was really hot to the touch. It was at least 100 that day. I took his phone, put it in a ziplock bag and set in the ice chest. After about 20 minutes it came back to life.

I am moving some root-bound plants that always bloom profusely around Easter into the ground. They are the perfect plant: they bloom, they grow, they can handle the cold, they can handle the heat, they thrive on neglect.
Digging the hole for the middle one enabled me to find a sprinkler line – DAMMIT.

I posted a one of a kind masterpiece comment on the previous thread before heading back for my nap, and now upon my return, it’s gone. Not over there, and not moved over here either,. It gets aggravating when I spend my time thinking away and putting together a piece of word art, carefully crafting my words and double checking all the spelling, etc. only to have it vaporize into the ether. Oh well, such is life. The internet gods may have just determined that this group is not worthy of such lofty comments and zapped it out of there.
In other news, I did get a little nap in since I’ve been rising early here of late. Heating up nicely outside today. Blackie, the coal black feral cat has been coming by regularly for breakfast here lately, and this morning was no exception. That’s about all for now.

#160 from earlier. I’m not aware of any phone conversations between passengers and the air traffic control people from flight 93. There were several phone calls from the plane’s phone system and individual cell phones, but they were not talking to ATC. If you have a link to one, I would certainly like to hear it. They would have no reason to talk to ATC since they had no means to control the plane. From my understanding, they were talking to friend and family, the airline, and maybe even some government officials, but not air traffic control.

I ain’t going no where today cause frankly there are way too many amateurs on the road. I do not care to watch fireworks on TV because the smoke usually blots out the beauty of the fireworks. I used to watch the Boston Pops when they did their thing with the fireworks. Love me some John Phillips Souza. Now what goes for 4th of July music during the fireworks display leaves me non-plussed.
So I am gonna stay home and watch a Godzilla movie I have not seen. SHIN GODZILLA. Npthing says patriotism like watching a guy in a rubber monster suit destroying Tokyo (figuratively speaking).

Some of you who follow air shows all around the country may be familiar with an act call “Shockwave;” a large truck tractor fitted with 3 jet engines which races some airplanes down the runway. Anyway, one of them blew up over the weekend at an air show at Battle Creek. I have read the transcripts and I really need to find the original links.
Bottom line it is my opinion nobody could have used a 2001 cell phone to talk or text anyone on the ground.
Yes the plane has a phone the Flight Attendants use but I’m certain they would not have turned it over to passengers in the middle of a crisis.
I have tried intermittently while flying at 30,000 feet to use my phone. Never had a signal. I started doing this about 2008-2018.
Links are worth a thousand words so let me do some research and post that.
My brand new phone died about 2 years ago with all kind of links and Documentation in Samsung Notes.
I don’t use a cloud service so all that is gone. As well as 13 years of Contacts.

There were passengers using cell phones and the airplanes also had phones available for passenger use. So there were several calls going out from the plane.
Problem is, if you call 911 from 30,000 feet, you are going to cover about 1/3 of the country and no one will know what you are doing while you are jamming the system. That’s why cell phone use is not allowed on airplanes. -

The guy in the plane had to be freaking out. I know the event was off the charts quick but seeing that truck tumbling had to be a nerve shaker. The guy was good, I think my reaction would be to get out of the area fast but it looks to me like he finished his run.

Evidently, all the stuff I read about the Ninja oven we have that talked about dehydrating was a different model – this one has a minimum temp setting of 250 – so we’re gonna have roasted peppers instead of dehydrated ones.

Quiet 4th of July in our neighborhood thus far. Given how terribly dry we are out here, we hope folks who just have to have fireworks will take them to a safe place to shoot them and stay away from rural neighborhoods out in the county. Pecan Grove always has a delightful 4th of July celebration with safety in mind, and we can see some of the fireworks here if they fly high enough. Same thing for Richmond’s celebration in the city park right across the Brazos from here. A shower early the afternoon would be nice….

There was a brief smattering of firecrackers close to Chez Harp around dusk last night. It seemed to be close and south, but I couldn’t imagine it being neighbors. I thought maybe it was just monkeys in a car driving back and forth on Tidwell for the several blocks it runs through this neighborhood. Didn’t last long but sure made the cats jumpy.
I fully expect ear-splitting noise and pandemonium tonight. Dusk to past midnight.

The Fourth of July 2002, our trusty 73 CJ-5 Jeep. The boy driving, beside him little Breanna, Rregina and behind her daughter, Austin and Jeremy (black shirt). I mounted a flag on each side of the Jeep but the boy headed off to the drainage ditch, first thing and clipped off one of the flags going through a small opening. FWIW; Austin and Daughter having the same color shirts was an odd coincidence. Man, those were the days.

I have a Cosori, which I love. That thing is a workhorse! The Excalibur is a similar make – rectangular, stainless steel mesh shelves in a cabinet – and is also popular from what I’ve read. My Cosori has six shelves and is small enough that it fits neatly into its space in my food preservation corner.
It can run temps from 95-165 degrees. I don’t think I’ve tried any higher. My oven can also do temps in the same low range on drying mode. (I found I had that option when I accidentally bought 30 dozen eggs.) It was a lifesaver!

I finally slowed down. I had to spend some quality time in the garden, picking off VBM eggs from my squash and injecting them. I may pull another plant – it’s not producing any fruit and I think it’s competing with the cantaloupe plant in the same tote. I tried to kill a VBM, but she was too quick and even though I think I got some soapy water on her, she got away.
Next time, ***tch.
I did find a nice sized zucchini, some asparagus beans, and a several cucumbers to harvest. I have a pattypan squash growing (makes me happy) and I have a slew of of roma tomatoes on the vine. Another tomato plant that I thought was done now has a bunch of flowers on it, so I’m glad I didn’t pull it already. I had to kill two separate hatchings of juvenile leaf footed bugs, which are sap sucking insects, on my tomatoes. They start out bright orange with black legs, hard to miss. Stinkbugs, from the same family, have nymphs that are gray. So, about 20 nymphs dead, one gotaway on the vine borer moth.
Before I started gardening, I got the brisket on the grill and actually successfully got a fire going. Keeping a fire going is not one of my life skills, so I was happy with that. I was grilling and spraying and harvesting and trimming all at the same time. Hubby is now home, and has put himself in charge of the BBQ pit, which now has ribs and some zucchini grilling with the brisket.
Oh, and I refilled the water bowls for Junior and the other yard birds. They needed refreshing. Big time. Junior was back in the tree above the bowls again.
After the gardening, I came inside, cleaned up a bit, and then began canning some discounted BUY NOW! meat from the store. I first seasoned the ribs and put those in the frig. I also had some ghee to process, and then I put my ropa vieja into more pint jars. That stuff smelled GREAT! It’ll be nice to have that one the shelf for later, and brisket is perfect for that recipe (which originally calls for steaks??). So, my canner is darn near full and cooking now.
I also had purchased some BUY NOW! ground beef, and I cooked and drained that thoroughly before putting it into Fred. It’ll be drying on paper towels for a while. I may change out the paper towels in a few hours. The idea is to dry it and pull as much fat out of it as possible before vacuum sealing the “gravel” into jars. (Did I mention I’m also canning a pint of beef fat that I saved from brisket trimmings? When I rehydrate the beef, it’ll be nice to have some tallow to add flavor.)
I am finally taking a minute to sit down. But not for long.

Yes and yes. I want one as well. A dehydrator can do most of what a freeze dryer can do, but there are certain items that are just better in the FD than what I can manage in Fred.

No. Pemmican has other ingredients. Backpackers call dried ground beef “gravel”. For obvious reasons.

The most important thing is the vacuum sealing, gotta keep the oxygen away from it, especially with potential fats involved. In the conditions you list, it should be good for at least several years, if not longer. If in no oxygen conditions, and away from UV light, I wouldn’t be afraid to eat it many years from now. A lot of preppers use mylar bags with oxygen absorbers, but I’m happy with vacuum sealing in jars. Jars don’t get holes – even pinholes- in them. If they do, there’s something more worrisome going on.

If one has the proper “chamber” lots of jars can be v-sealed at the same time. The chamber, depending on the size can get a bit pricey; not to mention the pump. I tend to think big, as in able to support a tribe of 30-40 in extreme conditions.
How much are mylar bags/tubes, and more importantly, how much and what is the capacity of the oxygen absorbers?

#71 Tedtam, I don’t think my brain can process that much anyway LOL… And I agree about the canning jars. I think I will get one of the vacuum lid things like you have – the way I did my “salad in a jar” involved putting a hole in the lid and sealing that with electricians tape. Might’ve been ok for keeping salad for a week, but I think I prefer NO HOLES for long term storage.

For those questions, you really should start looking at prepper videos. There are different sized O2 absorbers, different sized mylar bags, etc. They can cover more in-depth the information you are looking for than I can do here.

Homesteading channels sometimes cover the mylar bag storage, but from what I’ve seen, focus more on canning.

#70 TT: Thanks to both you and BSue for the conversation. I read the stuff, even though I wasn’t particularly interested, but managed to retain a few concepts. As it turns out, I have been saving and storing, clean, glass jars with lids for several years. Mostly about a pint to quart size. I have lots of jars that once held pickled quail eggs – these are a particular weakness of mine. So all told I have 5-6 cases of the two piece pint jars, some still full of pickled quail eggs, and about 3 dozen other various sized jars. There was this drive for me to collect these things and now I think I know why.

Hubby made me two of these – one fits two pint jars, the other we sized to fit the wider pickle jars, and it is also made to fit taller jars as well.
If I’m trying to vacuum seal and I have a lot of empty space inside the canister, I shove a towel or something in there so I don’t have to pump so much air. You could make one of these for all those jars you have. They can be used as long as the silicone ring in the lid is still in good condition.

If I’m using a regular or wide mouth canning jar, I have adapters for that. For other, non-canning jar standard size lids I use the canister. They can be used with an automotive brake pump or use an adapter that fits your electric vacuum sealer.

If possible, it’s better to avoid UV light. It will, over time, degrade the nutrient value and appearance of the food.

No. Pemmican has other ingredients. Backpackers call dried ground beef “gravel”. For obvious reasons.
Actually, the only other ingredient pemmican has is beef tallow, although dried fruits can be added.
Pemmican is dried beef, very lean, that is ground into a powder and mixed with tallow. Essentially, you’re covering each beef powder particle in a layer of tallow–which is the main ingredient in old timey candle wax. Pemmican can last almost indefinitely if beef is the only ingredient. If you add dried fruits, the shelf life goes down drastically to a couple months max as there is always a bit of moisture in dried fruit.
You may be able to use dehydrated beef as pemmican if it is finely ground into a powder, and you may be able to extend the shelf life if you do.
Pemmican adds fat back to the beef through the tallow. technically you can eat it raw, but its a whole lot easier to digest if heated in water. In the old timey days, pemmican was mixed with crushed up hard tack and whatever plants (or dried veggies) and fresh meat (small animals with little meat like squirrels, frogs, etc.) you find along the way to make a dish called “hoosh”.

Been pretty lazy again today, but I did get all my plants and animals watered. I finished reading my book and need to return it to the library tomorrow and pick up a new one. Not much on TV to watch either. I might start a new series on Amazon or something. Last night I watched the African Queen on FreeVee and had forgotten just what a great movie that is. Humphrey Bogart and Katherine Hepburn – just doesn’t get much better than those two.
Finished off dinner of 1 home grown tomater that my brother brought me along with some locally slaughtered ground beef patty with extra sharp cheddar cheese. Pretty good keto dinner. I found a matching salt grinder and pepper mill on amazon and got it a few days ago. It’s amazing the difference grinding your own peppercorns makes in both taste and smell, and I’m using some of that pink Himalayan salt with a coarser grind than table salt which I am liking pretty well too. Of course, what I’d really like is a big old tub of Blue Bell, doesn’t matter what flavor, but that just ain’t gonna happen – nor is fresh cold watermelon, peaches, strawberries, or anything else like that. I’ve been working on the keto stuff for almost 2 years now, and I’m holding my own just fine – now I’m courting a prospective new younger girl friend and want to be able to keep up. And besides, she’s a very attractive lady and deserves to have a trim, fit, handsome man at her side and not some old fat slob, so there’s more motivation. She’s also what we used to call at TRG (Typical Rice Girl), meaning valedictorian of her class, perfect score on SAT, Rhodes Scholar, etc. – just typical for a Rice girl of that era. I’ll keep you posted as to the progress – there is a geographic issue since she’s now living in Philadelphia. Another challenge to deal with, but should be no biggie.

A lot of preppers use curtains. Anything that reduces or blocks light would work.
Cabinet doors. Curtains. Socks. Godzilla. Certain relatives I know.

I REALLY need to get my hind-side in gear and do some “de-cluttering” in the fabric dungeon… Lots of shelving in there – and, for all the sewing I’ve done in the past decade, the fabric would languish in totes just as well as on shelves. And there’s only one window in there – that both miniblinds and curtains… on the side of the house that gets almost no sun at all….

Canning cycle finally finished. I got so busy blogging that I let the pressure drop below 11 psi. I had to start my whole cycle over again once I got it back up to pressure.
I hate when that happens.

I wish my kids were stockpiling. From what the farmers are saying, next year’ll be rough, and then it’ll take time to rebuild flocks, etc.
I’m scrambling late to the game. I told Hubby I want at least one year’s worth of food, preferably two, on the shelves.
Darren’s family probably has done that already. The Mormons are way ahead of everyone in being prepared. IIRC, they used to be required to have three years’ worth of food but I believe that was downgraded to two years.
Two years’ worth of food. That’s a lot of time, money, and equipment. I’m going through jars like crazy. This evening was twelve pint jars. Fortunately, I was gifted with a large number of jars last year, but I am steadily working my way through them and what I get at the thrift store.
Dehydrating saves on the jars, because they can store more food in a jar than canning. I can also more easily store dried food in the smaller jars that I often find at the thrift store – the half pint and quarter pint jars. Those are herbs and such, but I can also store dried eggs or other vegetables in them as well. I actually like that, because I can open a small jar without putting a large amount of food into contact with oxygen. I’ll use more lids, but I can store more food longer safely. And I can tuck those little jars into small spaces and thus expand my usable storage space in my house.
Because just one year’s worth of food will take up a lot of space.

So, I just dropped in and I’ve not kept up but we had a fine day. Since it is the fourth we got out early and I mowed about half the place while the wife cleaned up around the farm house. We quit about noon and I made a quick run to the Pig and sister showed up at 2 PM. While we were visiting on the front porch a nice thunder shower rolled in and we got 1.40″ of rain in an hour or so. At about 5, while the girls were getting the hens rounded up and back in I started the burgers and fries. For supper we had burgers, fries, beans and coleslaw that sister brought along with my egg salad that I made for the first time. A good meal for the fourth and Life is Good in my World. 😉

We can hear some fireworks off in the distance, though perhaps what we are hearing is coming from Richmond. Plenty of very loud crickets in chorus tonight.
Our yards around the house have been very well watered and are as green as can be. Just wish our pastures had gotten more than the 0.20″ a week or so ago.

About the train wreck in Mendon, Missouri. That story was on Fox a lot last week mainly to highlight the Boy Scout Troop that helped people out of the wreckage.
So, is this a fact, “The MSM has yet to tell this story”? I wouldn’t be surprised if they ignored a good story. The other day my wife was watching some breaking story on Fox and flipped over to the alternate universe AKA Bizarro World and they were praising the lying Biotch that was on the Jan 6 hearing. Wife likes to check in over there, every now and then just to see what they’re spinning. -

Back from TOK. Lighter than expected crowd this morning, but I stayed a little longer than usual. Still did not learn much except that it’s going to get hot today and hotter as the week goes on. No relief from the relentless heat in sight for a while yet, and of course no chance or rain or anything like that. So guess I’ll just keep the water hose at the ready and go pick up another book at the library and try to wait out the heat spell as best as I can.
I’m headed out to take care of my morning walk around and to feed and water the birds and animals for the day before it gets any hotter. You all have a great day.

Delightful to sleep in a bit this morning. I feed the cat at 6 and then go back to bed until around 7 or so, and then we’re up for breakfast and fetching the Chron (if it’s there).
Umm, mentioning the Chron, it seems lately that the editors are backing off some on the in-your-face Democrat propaganda in contrast to what is really going on nationally. They’re even covering that a bit more, while dutifully if they can, ignoring the Dem debacles that keep popping up all over the country. Meanwhile, elephantine footfalls keep coming on louder and seem to be steadily gaining on the donkey hoofbeats. Who would have thought that elephants can run with the best of donkey-land?

Another miserably hot afternoon with our thermometer on the back fence in full sun is stuck at 101 and the front porch thermometer now in shade is stuck at 96. And no relief in sight until maybe next week–or not.
We’re more and more grateful we did not plant any summer flowers in June, as they would not have made it in this heat. Well-established roses and one bed of new ones have held their own thanks to the sprinkler system. Two beds of wedelia are going strong and blossoming some. I appears you can’t kill wedelia once their roots are deep in the soil, even the ones planted late this spring are doing well.
We’re sure we don’t have green thumbs, just tough plants.
