A car club couple lost their twenty-ish son to COVID over the last few days. Hubby left his phone at the shop yesterday, so he didn’t find out until this morning.
I was feeling sick to my stomach, starting Christmas Eve, so I guess I need to report that to the vaccine trial folks. Hubby ate the same food I did, and he’s doing just fine, so it’s not a food issue. I think fatigue was a big part of me not feeling well, as I’ve been pushing my (lack of) sleep issues lately, especially with Christmas gift prep. The nausea only lasted Christmas Eve, though my tummy didn’t feel completely well Christmas Day. I did eat in the afternoon and evening, so it didn’t last long. I was tired yesterday and spent most of it horizontally on the couch, but I think that was just my body saying “quit doing so much”.
I’m feeling better this morning.

My wife had the most blessed Christmas ever, she has found her paternal family!
My wife’s mom had two sets of kids with two husbands, wife was supposed to have belonged to the first set but she suspected all her life her supposed dad was not her father. Mom, who has passed, steadfastly kept the secret until her dying day. All have passed on except one brother so she figured about a year ago if she was ever going to find out, time was running out. She and her brother did DNA tests with Ancestry, found out, yep, he is a half brother so the search began. A Search Angel with Ancestry took on her case and found the family but not which part. Turns out some of them lived within a couple miles where wife’s family lived at that time, the Tidwell/Homestead area.
Fast forward, she reached out to a man believed to be an uncle or father, he had two brothers, one has passed. Ages didn’t exactly work for him to be the father, he and his wife could not have been more accepting and both as sweet as can be. Through God’s Grace, she had found the one doorway that wouldn’t get slammed shut. We met with them a couple times, he, his wife and my wife became quite tight. He ended up testing, last Monday the results came in and he is her Uncle!
Sweetie is quite satisfied to end it there, she knows her roots now. New uncle seems insistent on carrying on the search, suspect is his lone living brother, a lone grouchy old man who had a brief marriage when he was younger but has lived alone all his years and wants it that way.
New aunt and uncle invited us over yesterday and we got to meet their daughter, wife’s new cousin! It was like we’ve always known them. What a blessing.

I probably did not explain all that very well, a very long twisted road to try and describe briefly, ask away if something is not clear.
Our oldest son’s father lost his dad when he was eleven, I lost my dad when I was eleven. We had not ever really thought about it, but neither of our boys had a grandfather. Did not expect their reaction to this, they are giddy as can be about finding out and meeting their granddad. They just have to understand this is a touchy situation, the man most likely will not accept this. And we can’t jeopardize new uncle’s and his relationship, evidently they have had fallings out before. The old curmudgeon probably won’t take kindly, if he is the father, all this been going on behind his back.

Morning gang. We made it through another Christmas. I suppose that from now own all we’ll be hearing about is 2020 in review and how much better things will be once Trump is gone. And of course, all the prophets will come out with their hare brained predictions for 2021. Oh, let’s not forget those NY resolutions too – does anyone do those things any more? A few years ago I resolved to not do any more NY resolutions, and that’s the only one I’ve kept.
I find it very heartwarming to hear about and see pictures of families and friends reuniting, at this or at any time of the year. Despite the best efforts of the Dems, the family unit still appears strong and forms the basis for our country. These stories give me hope.
OK, here’s hoping that you all have a great day today. It’s 52 degrees up here in Big D headed for 70’s with lots of sunshine. Enjoy. More later.

It was December, 1970, Red Beach, Da Nang, Republic of Viet Nam. It was hot but not unbearable as it was most times. We had scrounged up a Christmas tree from somewhere and had decorated it as best we could given the situation. It was a touch of home half way around the world. There were no girls to impress so we had shaved our heads just for the Hell of it. Alcohol may have been involved. We had a scrounger in our hooch that could get pretty much whatever you wanted, for a price! Charles Churchill Starr, III from the Northeast somewhere. Probably a millionaire by now.
We had a Christmas lunch earlier in the day There was a big roasted turkey sitting on the counter going into the mess hall. I thought this wont be too bad. We got turkey loaf instead. Think Spam but turkey instead. I’m guessing the general and his staff got the turkey!
Somewhere around this time Grannie had sent me and Tom, my buddy in the photo, a care package with ham biscuits. Due to the heat, humidity and the time it had taken for them to get there they were moldy. We seriously thought about eating them anyway!
There were no presents under that little Charley Brown tree but there was a comradery that I will never forget. Those who have never served could never understand. I guess the best present we both got was getting out of there alive and with all the big parts still attached.
So if you have family and friends this Christmas give thanks and enjoy your blessings. Say a small prayer for all those who are stationed here and there and can’t be with those they love. Also say a prayer for the families that have only an empty chair where their loved one would normally sit for the holidays. They need them. Merry Christmas! -

On 22 December, an Air Canada Boeing 737-8 MAX (registered C-FSNQ) was returning to the air after storage at Marana Pinal, Arizona, United States for a flight to Montreal, Canada. The aircraft carried no passengers, only 3 crew members.
Just after take-off, the crew received a left engine hydraulic low pressure indication. The crew and airline dispatch/engineering controllers initially decided to continue to Montreal but the crew received an indication of a fuel imbalance from the left-hand wing and shut the left hand engine down. The crew declared a PAN PAN emergency and diverted to nearby Tucson for a safe landing. All quiet at our abode yesterday other than a long phone call with spouse’s brother and wife up in currently cold and snowy Wisconsin. Because you speak the responses during Mass into the mask as you exhale, you could become nauseous because the mask can trap or slow down its escape through the edges of the mask. The excess CO2 could possibly become concentrated enough inside the mask to set off nausea from lack of adequate oxygen inside the mask. I read about this in one article regarding mask wearing and the possible side effects. Some masks seal around the edges better than others, depends on what they’re made of and how snugly they fit. Hope this helps solve the mystery.

Honestly, comments like that make you sound just as bigoted as those you portray with your comments. There are just as many ignorant, careless drivers. I could go on. Liking guns doesn’t make one ignorant, nor does it make one stupid. Guns are tools, just like money or shovels. You can use it properly or improperly. There’s nothing an inanimate object can do to hurt anyone. A rifle could sit on someone’s front porch all day and do nothing. Put it in the hand of someone with anger management issues, envy, or bigotry and it’s a danger.

Even if you are obsessed with guns, that doesn’t make one evil. Her remarks that lump all Houstonians and Texans into one “ignorant” group is the kind of language that leads to all kinds of problems. Once you start dehumanizing any particular group, then that group becomes a target for all kinds of bad behavior. I don’t agree with shooting guns into the air at all, I abhor it, but the hyperbole indicates a real problem with outlook.
Some people just refuse to admit they are part of a problem.

The reason the French and British always went to all the trouble to do elaborate things to their beef is because what they had was of poor quality. The reason Americans never embraced those recipes is because they weren’t really necessary.
Personally, I prefer the American way of cooking/smoking beef, as unadorned as possible with the minimal seasonings. The better the cut, the lesser the seasonings.

I don’t know if I mentioned it here but a NASA buddy of mine posted a video of him wearing a mask with an oxygen sensor under it. FWIW; There is normally about 21% Oxygen in the air along with 78% Nitrogen, 1% Argon and trace amounts of CO 2. Oxygen sensors will alert you if the Oxygen content goes below about 20%. He checked the ambient air and it was about 20.6% Oxygen and then slipped the probe under his mask. Within about 40 seconds the alarm went off with a reading of about 19.5%.
I was in a Stop N Rob, a while back and the gal behind the plexiglass was not wearing a mask so I told her it was good to see that since the glass should be enough protection. She said that wearing a mask gave her a headache so I told her about my NASA buddy’s experiment. -

Good morning y’all. Christmas eve and day I tore out my kitchen of almost all the cabinets and countertops. The only one remaining is connected to the dishwasher and sink. The microwave is still attached to the wall and I can’t figure out how to get to the top screws to get it off. The fir downs are coming off after breakfast as well as a “pony wall” at the wet bar. The sink for the wet bar is going away and that whole surface is going to be replaced with a bigger surface of granite that matches the rest of the kitchen, natch. All new cabinets are coming in next week, electrical for the gently used double oven ($400), vent hood, and new fridge location is being installed. I am even getting a 220 circuit and an additional 110 circuit installed in the garage. I have been taking cabinets out of the kitchen and installing them in the garage in an attempt to create order from outright chaos. If my tools have easily accessible places, sorted by category/function, it makes them much easier to use and replace.
As y’all may have inferred, we’re getting a new kitchen and we are very happy about it. We even have a place to stay for a couple of weeks for free. -

I learned something new about Martin Luther today. Philip of Hesse, who seems to have been his protector of sorts, wanted to marry a second time and asked Luther for a way to do it biblically. Morning gang. Slept in a little again this morning, and then been on the prowl of the internet just checking out stories. Last night’s made for TV college football bowl game featured undefeated Coastal Carolina of the Sunbelt Conference versus Liberty University which only took up D1 football a short while ago and was appearing it it’s first bowl game ever. Liberty won in overtime, and while I didn’t have a dog in the fight, it was a pretty good game. That’s one reason I’m a little late this morning.
I’ll make a trip to Wallyworld later for some of my keto supplies – meat, greens, eggs, and tomatoes, and get ready to spend a few more days here in Big D. I take care of my meals and BFF takes care of hers, but we both manage to work in the kitchen at the same time without too much yelling at each other. I’m hoping all the gift returns and exchanges will be done by the time I get there.

The Texas order reinforces an order issued by California Governor Gavin Newsom that all Californians must stay in their homes unless they are defecating on the sidewalk like normal Californians.
“The California plague has already infected hundreds of thousands of Texans and killed hundreds. We are trying to prevent further destruction,” Abbott said.
Border patrol will be stationed on the West Texas border to enforce the quarantine.
Earlier efforts by Governor Abbott have had mixed results as Californians still seem to be sneaking across the border, probably from Oklahoma, into Texas.
“We will station an impenetrable line of Texas moms across the northwestern border of Texas to keep those pesky liberal California immigrants out.” Abbott said giddily as he unveiled the plan to an unsuspecting media. This brings a whole new meaning to the phrase “Build the Wall!”
I must admit, I was initially a skeptic of the “wall of moms” but Governor Abbott managed to convince me. With an old VHS deck and lighting quick rewind and fast forward features, he was able to run the tape of the Portland protestors being protected by their mommies.
Rumor has it Californians are already freaking out about Abbott’s plan. While Governor Gavin Newsom continues to terrorize the state of California with lockdowns and exorbitant tax rates, his citizens have been flocking to Texas at alarming rates, but the Lonestar State has had enough.

#110 TP: Tile backsplash. Fir downs are gone as is the sheet rock on the pony wall. There is a drain pipe from upstairs as well as electrical and water supply lines in it. I am not comfortable tackling that part. The wet bar was on the other side of the breakfast nook and a peninsula so it never got used.

We finished the preliminary clean up and are now at a stopping point for what I am going to do. We worked hard these last few days. I still have a few cabinets to hang in the garage and then start the process of loading and organizing my tools, gizmos and whatnot. Fortunately, I have all of next week off and it will take all of next week to get it done.

A neat trick from a “Cook’s Illustrated”
There are a few tricks to help keep ground beef tender and juicy. One of them I was already doing: using meat with a relatively high fat content. Another is to add salt and let the meat sit for about 20 minutes. In addition to seasoning the meat, salt alters the structure of the meat proteins to better allow it to retain moisture. Finally, you can raise the pH of the meat with a little baking soda to help the proteins attract more water and hold on to it.
Indeed, incorporating baking soda—¾ teaspoon plus 2 tablespoons of water to help it dissolve—not only kept the meat juicy and made it even more tender, but it also produced an unforeseen benefit: Since the beef now barely shed any moisture during cooking (not even the small amount of water that I added to dissolve the baking soda) and a higher pH significantly speeds up the Maillard reaction, the meat browned much more quickly. This meant that I could cook it in a single batch rather than in three—a major timesaver.
Better Browning Through Chemistry
Browning ground beef is a challenge since it expels juices more rapidly than chunks of meat do, and most of that moisture needs to evaporate before browning can occur. To limit the amount of liquid, the usual solution is to brown in batches. We stick with one batch but toss the meat with baking soda before cooking, which helps lock in moisture.

Made my trip to Wallyworld, and surprisingly, the place was not very busy at all. I even took the time to browse around a little, check the prices on TV’s and c9omputer monitors, etc. Found most of the stuff I needed, checked out, and left. Oh, I forgot to mention my real find at Wallyworld. Some of you may remember that when the pandemic started, there was a serious run on toilet paper, paper products, and cleaning products, etc. But there was also a run on canned goods having longer shelf lives, and particularly canned meats. Now I’m one who thinks stuff like vienna sausages and potted meat are a delicacy only fully appreciated when you are out on the boat fishing in the heat of the summer, but should remain on the store shelves the rest of the time. But then there is the issue of Spam. First of all, who knew that Spam is keto? Well, it is. Now days there are several flavors of Spam to select from in addition to their old stand by that’s been around forever. The one flavor Spam that I can handle is “Hot and Spicy,” all others fall short. Short story made long, periodically since the great pandemic shortage, the shelves have not been fully restocked with Spam products. You might find a few cans of this flavor or that flavor at some Wallyworld from time to time, but it’s mostly empty shelves, and never the hot and Spicy kind – until today. Sitting there at the Wallyworld, in the midst of empty shelves, was a brand new case of Hot and Spicy Spam. I was tempted to get them all, but I decided to play fair and scored only 4 cans. Between the Owens hot sausage and the H&S Spam, I should be good for breakfast for another month or so now. So that’s the score of the day for me.

My little George Foreman grill browns meats nicely, and my 80% lean burger always comes out plenty juicy. Not sure what’s up with that story, but then my gourmet cooking days are behind me anyway.

Me, too, but after watching some of these pros, I’m changing my mind.
Watched a pro on YouTube do a test on thick steaks (1.25/1.5) for the grill.
Two were salted 5 days ahead, two were salted 24 hours ahead, and two were salted an hour before cooking.
Hands down the 24 hour steaks turned out the best. Retained the most moisture, had a great browning on the outside.
He was shocked and repeated the test many times. Says he now always salts 24 hours before, if he has the time and remembers to do it.

Well, the Texans almost pulled out a win over the Bengals this afternoon, but sadly it failed in the last minutes. Saw the first half of the match when they were tied. Then we went to late lunch at our fave neighborhood place, the Swinging Door on FM 359, only a mile from us. Came home to see what had happened in the game while we were out, and things had not changed much in the back and forth scoring. Then I noticed the win/loss records of both teams on the bottom of the screen and saw that they were woefully essentially tied. Bengals pulled it out with only a few minutes left in the game, and the Texans could not score again to win. Sad.

About the chili. The other day several folks were talking about chili seasoning mixes and I thought that odd,especially for some of our great cooks here. FWIW; I’ve NEVER, ever used any prefab mix. I found a Texas recipe years ago and tweaked it over the years and it is GOOOD!

You can’t go wrong starting out with 1/2 tsp of salt per pound of beef. Then you can add down the line for taste.
For my chili seasoning, I’ve modified it by now mixing this Hot Chili Powder with this Ancho Chili Powder about 50/50. The pure ancho gives it another dimension, a richer flavor.
Spice House of Chicago – can’t recommend them enough.

Just found out that my high school French teacher, Monsieur LeGrand, passed away.
I used to leave him notes about his baldness on his chalkboard in shorthand. He brought croissants to us in class from a French bakery he liked. I hear he arranged for dinnertime forays for some of his students to French restaurants in the area.

This is a fascinating story. I never realized the Brits were the ones who took over and kickstarted the VW Beetle production.
Series production of the civilian Volkswagen, referred to internally as “Type 1”, which later became world-famous as the “Beetle”, only started following the end of World War II on December 27, 1945 under the trusteeship over Volkswagenwerk GmbH which had been assumed by the British Military Government in June 1945. The British intended to use the Volkswagen Type 1 to perform urgently needed transport tasks within their occupation zone. It was this British pragmatism that finally protected the plant against impending demolition. Senior Resident Officer Major Ivan Hirst played a key role in this development. It was his farsightedness and talent for improvisation that made it possible to start automobile production in the years of rationing under conditions dominated by shortages. With his enthusiasm for technology and cars, his purposefulness and distinct attitude, he succeeded in transforming a former armaments plant into a civilian industrial company in an impressively short space of time.
The British Military Government had already issued an order for 20,000 vehicles in August 1945. The Kroger near Montrose and Westheimer will be closing in a few days – January 7th, I believe. The strip center next to it, home of a Half Price Bookstore that I shop at sometimes, is also being torn down. We hear it’s going to be yet one more high rise apartment building. There aren’t any other grocery stores in the area; the closest is a Whole Foods at the edge of downtown.
I guess someone made them an offer they couldn’t refuse.

Former Houston Astro ace pitcher Joe Niekro’s brother, Phil, died today after a battle with cancer. He outlived his younger brother by 14 years. They were amazing knuckleball pitchers who pitched long careers.
- His 221 career wins make him one of the most successful knuckleball pitchers of all time. The Niekro brothers combined for 539 total wins, setting the major league record for the most wins by a pair of brothers.
- On May 29, 1976, Niekro hit the only big league home run of his career (973 lifetime at bats), and it came off his brother Phil.

When MIL passed, I found the original paperwork for their property. They purchased it for around $40,000. Let’s just say it’s worth a heckuva lot more now. We are considering selling it and investing the money. We may have some good options for retirement income.
Hubby’s reluctant even though we’ve talked about it. Our units serve a particular niche – small, one bedroom units, suitable for people who work in the area but can’t afford the more upscale apartments. Those units sustained his mother through her retirement, with Hubby’s major assistance, and are a major part of our retirement plans. With age comes its own challenges, however, so we’re considering letting them go.

I think there is; but it certainly isn’t just a few blocks away like the Kroger. There are a lot of residences between Montrose and I-59/Bagby; also, north of Westheimer to Allen Parkway. There are a lot of restaurants but few grocery stores.

The Packers/Titans game came out very well for Green Bay tonight. Something like Packers 40, Titans 14, game played on snow already on the field and also falling during the game, in a freezing 24 degrees. The field has heating underneath so it retains green grass in decent condition in winter and keeps the turf from freezing solid. Thereby eliminating it from being like falling on concrete.
