I must have fallen asleep in my chair around 8:30. Woke up at 1:15 and took Max out.
Must’ve had a shower come through because it’s a little damp and cool out there. Nice.

The rain has moved over us now, much less vigorous than folks to the north in Houston have described earlier. Seems to be falling apart, no lightning & thunder and barely a breeze.
Let me amend that: large thunderclap just as I closed out the above paragraph. It ain’t dead yet.
I don’t think Ruben Ramos had a chance to unplug. I think there’s a good chance the pole tents over the stage blew away.

I’ve got 5 juvenile raccoons on the patio, and the rain is starting. They may be blown away by the wind. At least the temp has dropped to 80 after lingering at 92 until 9 pm.
I’m seeing lightning to the east and northeast. Not hearing thunder yet. I do hear the Tejano band at St. Patrick’s 138th annual summer festival. I’m thinking they might wanna start unplugging.
Rockport style: Snapper and Redfish fillets scale on and down. Fresh lemon/lime juice, butter with crushed garlic on the grill till done. Coarsely ground black pepper added.
Scoop it up with a long spatula and serve. You can always sprinkle it with a little finely chopped cilantro or parsley if you want.

Left/Right shoes – never thought about it but prior to about the 1830’s there wasn’t a difference. When cobblers started using lathes to make shoes is when the difference started.
I swear, I was just fixin’ to say, one of my earliest memories in Houston is watching Red’s show on channel 13 and him saying “Americans eat entirely too much organ meat!”

I heard Dr. Red Duke make a comment one time that you shouldn’t eat any offal at all except perhaps the heart as it’s a muscle. I’m good with that. However, there’s not much I haven’t eaten at least once. Especially since we always raised/butchered our own meat.
Heh heh. Now Fishie’s fretting that not enough people are tuning into her Conservative fakery crusade. I thought I “unfollowed” that stuff. Apparently not.
Best I can tell, the prior two generations endured wars and worked their assets off so I wouldn’t have to eat kidneys.
Call it white privilege, call it whatever makes you feel good.
I call it blessed.
If the Left is successful, I’ll eat whatever’s necessary.
But I’ll be a very pissed off foe.

Had grilled redfish on the halfshell this evening. Port Mansfield style from folks I knew there. Just fillet the fish. Period. Put the unscaled fillets scale side down on the grill. Oh and Fay’s Thanksgiving gravy has the the gibs in it. But that’s okay.

Beer coolers are the place to be on a hot day. I used to go into the walk in cooler when it got to hot to work in the kitchen, 10 minutes does wonders.
And I’ve combined the need for a full tank of 93 Premium with the need to cool down my core temp………………..after I top off Gracie’s tank near home – I go sit in the store’s beer cooler and catch up on my messages. NO sense wasting all those BTUs!!! 🙂
The original ‘Threadgill’s’ on North Lamar in Austin use to have the ONLY liver & onions that I have ever liked – I see it’s still on the menu but I’ve not partaken there in many coon’s ages.

I’ll just hafta take your word for it.
Dat’s cuz you never had Granny’s liver and onions.
My favorite offal is fried chicken gizzards. It really shouldn’t be classified as offal. Nothing but a big knot of muscle.
Not a fan of liver by itself in a plate. Blech.
Even with onions.
And ketchup.
LOTS of ketchup.
ALL the ketchup.
Chicken livers hearts & gizzards are good ground up in dirty rice.
Goose liver is good in pâté du foie gras.
Beef(?) liver is good in liverwurst/braunschweiger.
No kidneys for me. I occasionally like liver but since Granny passed I haven’t found anyone who can cook it properly.
The proper way to cook a kidney is as follows:
Place kidney(s) in a large pot of water, then boil the pizz out of them.
