Does anyone have any special family recipe or dish they’d like to share? What dish means “Thanksgiving” to you?
Here’s one:
Butternut Squash, Sweet Potatoes, and Apples
1 medium butternut squash
3 or 4 medium sweet potatoes (about as big in diameter as the neck of the squash)
4 or 5 tart baking apples
1/4 cup dark brown sugar
1 stick unsalted butter
Cinnamon
Nutmeg
Roasted pecans (optional)
Peel squash; slice neck into 1/2″-thick slices. Split and seed bulb end and cut into pieces about as bug as the neck slices.
Peel sweet potatoes and slice into 1/2″-thick slices; boil in unsalted water for about 5 minutes. Remove from water and allow to cool.
Peel and core apples. Cut into 1/2″-thick slices
In 9×9 baking dish, arrange slices in rows, alternating between squash, sweet potatoes, and apples. You’ll probably get three rows, plus a space that can be filled with leftover pieces. Sprinkle brown sugar on top, dot with pats of butter, and sprinkle with cinnamon, nutmeg, & pecans.
Bake at 350 for about 30 min or until squash & sweet potatoes are soft.
