Pre-Thanksgiving Recipe Exchange

Does anyone have any special family recipe or dish they’d like to share? What dish means “Thanksgiving” to you?

Here’s one:
Butternut Squash, Sweet Potatoes, and Apples

1 medium butternut squash
3 or 4 medium sweet potatoes (about as big in diameter as the neck of the squash)
4 or 5 tart baking apples
1/4 cup dark brown sugar
1 stick unsalted butter
Cinnamon
Nutmeg
Roasted pecans (optional)

Peel squash; slice neck into 1/2″-thick slices. Split and seed bulb end and cut into pieces about as bug as the neck slices.
Peel sweet potatoes and slice into 1/2″-thick slices; boil in unsalted water for about 5 minutes. Remove from water and allow to cool.
Peel and core apples. Cut into 1/2″-thick slices

In 9×9 baking dish, arrange slices in rows, alternating between squash, sweet potatoes, and apples. You’ll probably get three rows, plus a space that can be filled with leftover pieces. Sprinkle brown sugar on top, dot with pats of butter, and sprinkle with cinnamon, nutmeg, & pecans.

Bake at 350 for about 30 min or until squash & sweet potatoes are soft.

Cedar Plank Gaspergoo

1/2″ cedar board
1 large gaspergoo

Place whole gaspergoo on cedar plank and cook very slowly over a semi-hot (250° F) barbecue pit. Cook for about 5 hours. Scrape the goo fish off the cedar plank and into the garbage then eat the plank.

Field dress and skin one medium sized raccoon. Remove claws, head, and tail. Salt and pepper to taste and bake one hour at 350 degrees. Turn off oven and allow to cool for one half hour. Some add onions, carrots, and celery while baking. Yum, yum.
